Fresh Squeezed Grapefruit Ginger Mimosa

Fresh ginger and grapefruit are the stars in this gorgeous pink mimosa made with sparkling rosé.

Ingredients

For the Ginger Infused Simple Syrup

  • ¾ inch fresh ginger root cut into thin slices
  • cup granulated sugar
  • cup water

For the Mimosas

  • 1 bottle sparkling rosé
  • 2 cups freshly squeezed grapefruit juice
  • 1 batch ginger infused simple syrup

Instructions

For the Ginger Infused Simple Syrup

  • Place sliced ginger, sugar and water in a pint sized mason jar. Shake well to combine. Allow to rest for at least 30 minutes before continuing with the next step.

For the Mimosas

  • Fill each glass half way with sparkling rosé. Add one tablespoon of ginger simple syrup to each glass. Top off the glasses with freshly squeezed grapefruit juice. Serve immediately.
