Shaved Brussels Sprouts, Apple, and Cranberry Salad

A tasty combination of Brussels sprouts, apples, dried cranberries and feta cheese, dressed with a maple, apple cider, and dijon vinaigrette. A definite crowd pleaser!

Ingredients

Maple Roasted Pecans

  • ½ cup pecans
  • ½ tablespoon olive oil
  • ½ tablespoon maple syrup
  • teaspoon Papa Joe's Salt or mixture of salt and pepper

Dijon Apple Cider Vinaigrette

  • 2 tablespoon apple cider vinegar
  • 2 cloves garlic, peeled and pressed
  • 1 tablespoon maple syrup
  • 1 tablespoon apple cider
  • 1 tablespoon fresh thyme, chopped
  • cup olive oil
  • 1 pinch Papa Joe's Salt or mixture of salt and pepper

Brussels Sprouts Salad

  • 4 cups Brussels sprouts, shaved
  • 1 large apple, cut matchstick
  • ½ cup feta cheese
  • ½ cup dried cranberries

Instructions

Maple Roasted Pecans

  • Preheat oven to 350° F. Line a quarter sheet pan with parchment paper
  • In a small mixing bowl, combine the pecans, Papa Joe's Salt or salt and pepper, maple syrup, and olive oil. Stir to combine.
  • Spread evenly onto the sheet pan and drizzle with any remaining liquid from the bowl.
  • Roast at 350° F for 15 minutes. You will begin to smell a nutty, sweet flavor coming from the oven. This means that they are ready. 
  • Remove from the oven and allow to cool thoroughly. These pecans can be used immediately for the salad or made ahead of time and stored in an airtight container until you are ready to use them.

Dijon Apple Cider Vinaigrette

  • In a medium-sized jelly jar or glass measuring cup, combine all dressing ingredients.
  • Cover the jar and shake vigorously to mix the dressing. If you are not using a jar, use a whisk to combine the ingredients.
  • Season with additional Papa Joe's Salt or salt and pepper if needed.

Brussels Sprouts Salad

  • Chop or break the Maple Roasted Pecans into bite sized pieces.
  • In a large salad bowl, combine Brussels sprouts, apple, feta, cranberries, and the Maple Roasted Pecans. Toss with the dressing and enjoy!

Notes

Feel free to swap the feta for another favorite cheese, or to switch the pecans for another toasted nut that you love.
