Ultimate BLT Platter (An Easy Weeknight Dinner)

- 4 Stone and Skillet English Muffins
- 8 ounces bacon
- 1 large tomato
- 1 large avocado
- 1 batch spicy mayo
- 1 cup baby arugula
- 6-8 slices red onion
For the Spicy Mayo
- ¼ cup mayonnaise
- ¼ teaspoon chipotle chili pepper
For the Platter
In a large frying pan over medium heat, fry your bacon until nice and crispy. I like to cut the bacon in half and fry smaller pieces. This should take 5-6 minutes on each side to cook.
While the bacon is cooking, prepare the platter. Slice the tomato, rinse and dry the greens, slice the avocado and onion and make the spicy mayo.
When the bacon is crispy, move to a paper towel lined pan and grill the English muffins. Cut each muffin in half and spread butter over both halves. Grill over medium heat in a large frying pan until golden brown. Add grilled muffins to your BLT platter and dinner is served! Easy and delicious!
