Our Apple Cinnamon Pancakes are perfect for cozy mornings Full of fall flavors, these fluffy pancakes are made with apple butter, shredded fresh apples, and plenty of cinnamon. Make this simple breakfast recipe with simple ingredients that you already have in the kitchen.
Add the flour, sugar, baking powder, cinnamon, and salt to a medium mixing bowl. Whisk together until well combined.
1 cup all purpose flour, 2 tablespoons sugar, 2 teaspoons baking powder, 1 teaspoon cinnamon, ½ teaspoon salt
Melt the 2 tablespoons of butter in the microwave or on the stovetop. Set aside to cool slightly (you don't want it hot enough to cook the egg).

In a large measuring cup, mix the melted butter, milk, apple butter, egg, and vanilla. Whisk until smooth and the egg and apple butter are fully incorporated.

Pour the liquid ingredients into the dry ingredients. Gently mix with a whisk until just combined. Don't overmix - a few lumps are okay!
Use a box grater and grate the apple (peeling is optional) directly into the batter. Gently fold the grated apple into the batter until evenly distributed.

Heat a griddle or large nonstick skillet over medium heat. Lightly grease with butter or cooking spray.
Pour ¼ cup of batter per pancake onto the hot griddle. Cook for 2-3 minutes until bubbles form on the surface and the edges look set, then flip. Cook for another 1-2 minutes until golden brown and cooked through.
Stack the warm pancakes and serve with maple syrup and an extra dollop of apple butter on top.
