Don't Need a Full Batch of Scones or Have Leftover Scones - There are a couple of reasons to freeze scones. The first is that you have a small group enjoying the scones and you just don't need a full batch of scones. You can freeze half of the batch and save the homemade scones for a different day.
Prep for a Future Breakfast or Afternoon Tea - Freezing scones is a great way to be prepared for a weekend breakfast or afternoon tea. You can make the scone dough, cut it into triangles and freeze it. At a later date, simply pull the frozen scones from the freezer and bake them. You will have fresh, warm scones with little effort.

Freezing Baked Scones
When freezing scones (baked or unbaked), it's important to make sure that the scones are separated by a layer of parchment paper so that they don't stick together. I like to use either a large airtight container or a heavy-duty freezer bag.
- Line your container or heavy-duty freezer bag with a piece of parchment paper.
- Arrange scones in a single layer in your container or freezer bag.
- Cover with parchment paper.
- Continue layering until all of your baked scones are in the container.
- Cover with one final layer of parchment paper. Store in the freezer for 2-3 months.
Freezing Unbaked Scones
- Arrange the uncooked scones on a parchment lined sheet pan. Transfer to the freezer for 1-2 hours or until frozen solid.
- Line your container or heavy-duty freezer bag with a piece of parchment paper.
- Move the frozen, uncooked scones to your container or bag and arrange in a single layer.
- Cover the first layer with parchment paper.
- Continue layering until all of your unbaked scones are in the container.
- Cover with one final layer of parchment paper. Store in the freezer for 2-3 months.

It's important to label and date your scones before moving them to the freezer. If the scones are unbaked, I even like to add a note about the baking temperature and bake time to the label. To your freezer bag or container add the following information:

Keep Separate with Parchment Paper
Scones will stick to one another in the freezer so use a sheet of parchment paper between each scone to prevent them from sticking to one another.
Freeze on a Flat Surface
If you are freezing unbaked scones in a plastic bag, arrange the scones in the bag and then place that bag on a cutting board or sheet pan before moving to the freezer. This keeps the unbaked scones spread out and laying flay while they freeze. Once the dough is frozen, you can remove the flat surface and store the scones anywhere in your freezer.
Freeze Scones and Toppings Separately
When you freeze baked scones, you want to omit any glaze or drizzle. If you are freezing all unbaked dough, wait and make the glaze or drizzle on the same day that you are baking the scones. If you are freezing baked scones, freeze them with no toppings. Store the glaze in a small, airtight container right inside of the container with your baked scones. When you refresh the baked scones, you can add the glaze or drizzle right after warming the scones.

How to Reheat Frozen Baked Scones
For best results, arrange the baked scones on a parchment lined cookie sheet at room temperature for one hour. Then, move to scones to the oven at 350° and warm the scones for 5-7 minutes. This will bring back those freshly baked scones. It can be helpful to place the scones on a wire rack and then on a sheet pan so that the warm air is able to travel around the entire scone. You can also use your toaster oven to warm just a few scones at a time.
How to Bake Frozen Scone Dough
There are no major changes that you need to make when baking frozen scone dough. You can bake scones from frozen and then add a few extra minutes to the baking time in the recipe. You can simply place the frozen dough on a parchment lined sheet pan. Let the frozen dough sit at room temperature while the oven is preheating and then and bake as directed. It's a good idea to brush the top of the scones with a bit of heavy cream or whole milk. The second method is to thaw the dough overnight in the refrigerator and then bake as directed. Baked scones will have golden brown edges and will bounce back in the middle when you gently poke them.
