This recipe comes just in time for some warm summer-like weather. Imagine yourself sitting on your back deck, a glass of your favorite wine in your hand, knowing that your quick, easy, and super tasty dinner is just about ready to serve. This pizza has it all. A perfect crust covered in olive oil, fresh parsley and garlic. Next comes crispy bacon, fresh corn on the cob, a bit of ricotta and lots of mozzarella. The finished pizza is topped with a simple arugula salad and a drizzle of my favorite balsamic glaze. No need to make a salad, it's already on the pizza! You can have this fun, simple, and super delicious pizza recipe into the oven in less than 15 minutes. This means less time making dinner, and more time for you to relax.
In this post I'll walk you through preparing the pizza dough, organizing the toppings, and finally how to bake and serve the pizza. I will also give you options for making this pizza gluten free. Kids don't want corn and arugula on their pizza? No worries! Order these mini pizza pans and let the kids make their own individual pizzas and choose the toppings themselves! 🙂

How to Prepare the Sweet Corn and Bacon Pizza Dough and Toppings:
I'm going to be 100% honest with you here. I am a lazy pizza maker and love using the frozen balls of dough from my local grocery store. So that is what I did when I made this recipe. If you are ambitious, or more organized that I am, by all means make your own pizza dough.
You'll remove your pizza dough from the refrigerator about an hour before you start making the pizza. While the dough is warming and rising, you'll prep the rest of your toppings.
Cut the bacon in to ½ in strips and fry oven medium heat in your favorite frying pan until crispy. Move to a paper towel lined plate until you are ready to use them.
Peel and wash your sweet corn. Cut the corn from the cob and reserve until ready to make the pizza.
In a small mixing bowl, combine the olive oil, garlic, parsley and Papa Joe's Salt.
Toss the arugula with the juice from ½ of a lemon and a sprinkle of Papa Joe's Salt or combination of salt and pepper.

Making and Baking the Sweet Corn and Bacon Pizza:
Once the dough is ready to go, you'll stretch the dough to make a circle, lay it on a parchment lined sheet pan and use your hands to make a large circle of pizza dough.
If the kids aren't eating the bacon pizza, this is the time that I give them each a small ball of dough and they make their own pizzas with their choice of toppings.
Once your dough is in a nice circle, layer on the olive oil and garlic mixture, the bacon, sweet corn and cheeses. Bake pizza at 450° for 15 minutes or until golden brown on the edges and the cheese is bubbly and golden brown too.
Finishing the Sweet Corn and Bacon Pizza:
Remove the pizza from the oven and top with the dressed arugula. Cut into 6-8 slices, drizzle slices with the balsamic glaze and serve immediately.

Make it Gluten Free:
Swap the pizza dough for your favorite gluten free crust or a frozen cauliflower crust from the grocery store.

Sweet Corn and Bacon Pizza with Arugula
Ingredients
For the Pizza
- 1 pound pizza dough
- 4 slices bacon cut into ½ inch slices and fried until crispy
- 1 ear sweet corn peeled and cut from the cob
- 1 cup mozarella cheese, shredded
- ⅓ cup ricotta cheese
- 4 tablespoons olive oil
- 1 tablespoon fresh parsley, finely chopped
- 1 clove garlic, crushed
- ½ teaspoon Papa Joe's Salt or combination of salt and pepper
For the Arugula
- 1 cup baby arugula
- ½ tablespoon lemon juice, freshly squeezed
- 1 pinch Papa Joe's Salt or combination of salt and pepper
- 2 tablespoons balsamic glaze
Instructions
- Remove pizza dough from the refrigerator about an hour before you start making the pizza. While the dough is warming and rising, you'll prep the rest of your toppings.

- Bake pizza at 450° for 15 minutes or until golden brown on the edges and the cheese is bubbly and golden brown too.
- Remove the pizza from the oven and top with the dressed arugula. Cut into 6-8 slices, drizzle with balsamic glaze and serve immediately.
