This recipe starts off with with an insanely delicious ginger infused simple syrup. The ginger simple syrup is mixed together with freshly squeezed grapefruit juice and sparkling rosé, creating a perfectly pink, and absolutely delicious cocktail for your next celebration. The best part...this rosé mimosa feels really special and fancy, but doesn't require a bunch of ingredients.
In this post, I'll walk you thorough how to make these mimosas. We'll start by making some ginger infused simple syrup, then we'll squeeze some fresh citrus and finally we'll talk through storage tips and mixing up the mimosas. You can pretty much prep this entire cocktail ahead of time. This recipe makes about 6 mimosas.
How to Make Ginger Infused Simple Syrup:
Simple syrup is so easy to make and you can literally add any flavor that you like to it. For this recipe, you will combine ⅔ cup granulated sugar with ⅔ cup water in a pint sized mason jar. Next, you take about ¾ of an inch of fresh ginger and slice it into rounds...about the thickness of a nickel. You'll add those pieces of ginger to the sugar and water combination, put the lid on the jar and give it a good shake.
At this point, you will leave the simple syrup alone on your counter (for up to 2 hours) or in the refrigerator until you are ready to mix up the mimosas. The longer you leave the ginger in the simple syrup, the stronger your ginger flavor will be. At this point, you will run the simple syrup through a mesh strainer and into a second mason jar to remove the ginger pieces. Your ginger infused simple syrup is ready to go.
How to Squeeze and Store Fresh Citrus Juice:
I love using fresh citrus and I find that my glass citrus juicer is truly all I need unless I am making larger batches of juice. For this recipe, you will cut and juice three grapefruits. This should give you about 2 cups of fresh grapefruit juice. I like to run the grapefruit juice though a mesh strainer so there is no pulp in my mimosas. This is personal preference. If you like pulp, feel free to skip this step. Refrigerate until nice and cold. Juice can be stored in the refrigerator for up to 3 days.
How to Mix Up Your Fresh Squeezed Grapefruit Ginger Mimosas:
Individual Glasses:
Make sure that all of your ingredients are cold. Start by filling each of your glasses about half way with the sparkling rosé. Next, add 1 tablespoon of the ginger simple syrup to each glass. Fill the rest of the glass with your freshly squeezed grapefruit juice and serve right away. You can garnish with a piece of mint, a slice of ginger or a grapefruit segment if you'd like. You can use any leftover ginger simple syrup to flavor your seltzer!
The Pitcher Method:
The other option here is to go ahead and mix up an entire batch of mimosas in a pitcher. You will add equal parts of sparkling rosé and grapefruit juice to a pitcher. Mix 6-8 tablespoons of the ginger infused simple syrup into the pitcher and store in the refrigerator until you are ready to serve. You may lose some of the carbonation this way so drink them quickly 🙂

Fresh Squeezed Grapefruit Ginger Mimosa
Ingredients
For the Ginger Infused Simple Syrup
- ¾ inch fresh ginger root cut into thin slices
- ⅔ cup granulated sugar
- ⅔ cup water
For the Mimosas
- 1 bottle sparkling rosé
- 2 cups freshly squeezed grapefruit juice
- 1 batch ginger infused simple syrup
Instructions
For the Ginger Infused Simple Syrup
- Place sliced ginger, sugar and water in a pint sized mason jar. Shake well to combine. Allow to rest for at least 30 minutes before continuing with the next step.
For the Mimosas
- Fill each glass half way with sparkling rosé. Add one tablespoon of ginger simple syrup to each glass. Top off the glasses with freshly squeezed grapefruit juice. Serve immediately.
